Add dry Madeira, pineapple cordial, and apple juice to a chilled spritz glass.

Gently add cubed ice to fill the glass.

Stir lightly to combine the flavours.

Pineapple Cordial Recipe
Ingredients:
500ml Fresh Pineapple Juice
250g Caster Sugar
5g Citric Acid (or juice of 1 lemon)
Method:
- Add pineapple juice and sugar to a saucepan over low heat, stirring until the sugar dissolves completely.
- Remove from heat and stir in citric acid (or lemon juice) to balance the sweetness.
- Allow to cool, then strain through a fine strainer to remove any pulp.
- Store in an airtight bottle in the fridge for up to 1 week.
