Peach & Mango Hot Wings With Blue Cheese Dip

Ingredients

  • Serves 4
  • For the Wings:

    • Olive oil, for drizzling
    • 2.5kg chicken wings
    • Juice of 2 lemons, divided
    • Salt, to taste
    • 250ml Franklin & Sons Refreshing Peach & Mango
    • 50ml white wine vinegar
    • 4 tbsp honey
    • 1/2 fresh habanero pepper (adjust to taste)
    • 15g dried chopped red chilies (adjust to taste)
    • 60g butter
    • Oil, for frying
  • For the Blue Cheese Dip:

    • 250g mayonnaise
    • 60ml milk
    • 1 tbsp lemon juice
    • 30ml cream
    • 120g blue cheese, crumbled
    • 2.5g salt

    Prepare the Wings
    Pre-heat the oven to 150°C (300°F). Place the chicken wings in a large bowl, drizzle with olive oil, sprinkle with salt and add the juice of one lemon. Toss to coat the wings evenly. Arrange them in a single layer on a baking sheet and bake for 45 minutes.

    Make the Sauce
    In a saucepan, combine the Franklin & Sons Refreshing Peach & Mango, white wine vinegar, honey and the juice of the remaining lemon. Add half of the habanero pepper (de-seeded if you don’t like it too spicy) and the dried chilies. Bring to a boil and cook until the mixture reduces and becomes syrupy (around 10-15 minutes). Remove the habanero, then stir in the butter until melted and combined. Keep the sauce warm.

    Fry the Wings
    Heat oil in a deep fryer to 200°C (390°F). Once the wings have finished baking, carefully fry them in batches until they are golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels.

    Prepare the Blue Cheese Dip
    In a bowl, whisk together the mayonnaise, milk, lemon juice, cream, crumbled blue cheese and salt until smooth. Adjust seasoning to taste.

    Serve
    Toss the crispy wings in the warm peach and mango sauce until well coated. Serve hot with the blue cheese dip on the side for dipping.
