Peach & Mango Hot Wings With Blue Cheese Dip

Ingredients

For the Wings:
- Olive oil, for drizzling
- 2.5kg chicken wings
- Juice of 2 lemons, divided
- Salt, to taste
- 250ml Franklin & Sons Refreshing Peach & Mango
- 50ml white wine vinegar
- 4 tbsp honey
- 1/2 fresh habanero pepper (adjust to taste)
- 15g dried chopped red chilies (adjust to taste)
- 60g butter
- Oil, for frying

For the Blue Cheese Dip:
- 250g mayonnaise
- 60ml milk
- 1 tbsp lemon juice
- 30ml cream
- 120g blue cheese, crumbled
- 2.5g salt

Prepare the Wings
Pre-heat the oven to 150°C (300°F). Place the chicken wings in a large bowl, drizzle with olive oil, sprinkle with salt and add the juice of one lemon. Toss to coat the wings evenly. Arrange them in a single layer on a baking sheet and bake for 45 minutes. -

Make the Sauce
In a saucepan, combine the Franklin & Sons Refreshing Peach & Mango, white wine vinegar, honey and the juice of the remaining lemon. Add half of the habanero pepper (de-seeded if you don’t like it too spicy) and the dried chilies. Bring to a boil and cook until the mixture reduces and becomes syrupy (around 10-15 minutes). Remove the habanero, then stir in the butter until melted and combined. Keep the sauce warm. -

Fry the Wings
Heat oil in a deep fryer to 200°C (390°F). Once the wings have finished baking, carefully fry them in batches until they are golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels. -

Prepare the Blue Cheese Dip
In a bowl, whisk together the mayonnaise, milk, lemon juice, cream, crumbled blue cheese and salt until smooth. Adjust seasoning to taste. -

Serve
Toss the crispy wings in the warm peach and mango sauce until well coated. Serve hot with the blue cheese dip on the side for dipping. -
