Ingredients

  • For the fish:

    • 600g sea bass fillets
    • 30g olive oil
    • 30g butter
    • 10g salt
    • 4g black pepper
    • 10g fresh thyme
  • For the glaze:

    • 300ml Franklin & Sons Orchard Apple & Pear
    • 80g honey
    • 30g wholegrain mustard
    • 30ml apple cider vinegar
    • 10g grated ginger
    • 4g ground cinnamon
    • 30g butter

    Make the glaze

    • In a saucepan, over medium heat, combine Franklin & Sons Orchard Apple & Pear, honey, mustard, apple cider vinegar, ginger, and cinnamon.
    • Let this simmer for 10-12 minutes, stirring occasionally, until slightly thickened.
    • Stir in the butter, remove from the heat, and set aside to cool.

    Cook the sea bass

    • Season the fillets with salt and pepper (to taste).
    • Heat the olive oil in a frying pan over a medium to high heat.
    • Cook the sea bass fillets, skin-side down for 3-4 minutes until crispy.
    • Flip and cook for another 3-4 minutes until fully cooked.

    Glaze the fish

    • Brush the glaze over the fillets, then cook for 1 more minute to absorb the flavours.

    • Plate the sea bass with a drizzle of the remaining glaze.
