INGREDIENTS
For the Raspberries:
- 200g fresh raspberries
- 30ml Franklin & Sons Pressed Raspberry Lemonade
For the Fool:
- 300ml double cream
- 200g soft goat’s cheese
- 40g icing sugar
- 1 tsp vanilla extract
- 75g caster sugar
INSTRUCTIONS
1. Marinate the Raspberries
In a bowl, combine the fresh raspberries with the Franklin & Sons Pressed Raspberry Lemonade. Stir gently, cover, and refrigerate for about 1 hour to allow the flavours to develop. This allows the raspberries to soak up the flavours of the lemonade, softening the fruit slightly and infusing the ingredients.
2. Prepare the Fool
In a separate cold bowl, add the double cream, soft goat’s cheese, icing sugar and vanilla extract. Whisk together until the mixture forms soft peaks and becomes airy, which should take about 5–8 minutes. The final texture should be light but firm enough to hold its shape when served. It may take longer than 5–8 minutes depending on the type of cream and whisking method, so be prepared for a possible variance in time.
3. Combine the Mixtures
Gently fold the marinated raspberries and their juices into the whipped cream mixture. Be careful to avoid over-mixing at this stage to maintain the light texture of the cream. Taste and adjust sweetness with caster sugar if desired.
4. Serve
Spoon the creamy mixture into dessert bowls. For a beautiful presentation, consider layering the raspberry mixture with the goat’s cheese mixture. Chill until ready to serve. Enjoy this delightful dessert with friends and family!
