Pork Belly In A Spicy Cola Sauce

INGREDIENTS
For the Marinade:
- 60g soy sauce
- 40g brown sugar
- 2 cloves garlic, finely chopped
- 200g onion, finely chopped
- 50g apple, grated
- 1 tbsp toasted sesame oil
For the Sauce:
- 1/2 Scotch Bonnet or habanero chilli, seeds removed, finely chopped
- 350ml Franklin & Sons 1886 Cola 100g onion, finely chopped
- 180ml tomato ketchup
- 1 tbsp Worcestershire sauce
- 100g brown sugar
- 1/2 tsp ground allspice
- 21/2 tsp salt
- 1/2 tsp black pepper
For the Pork Belly:
- 100g pork belly, skin scored
- 15g toasted sesame seeds, to garnish
INSTRUCTIONS
1. Prepare the Marinade
In a large bowl, combine the soy sauce, brown sugar, 1 garlic clove, chopped onion, grated apple and sesame oil. Stir well until the sugar is dissolved. Add the pork belly, making sure it’s fully coated in the marinade. Cover and let it marinate for 1–4 hours in the fridge for the best flavour.
2. Make the Spicy Cola Sauce
In a medium saucepan, bring the chopped chilli and Franklin & Sons 1886 Cola to a gentle simmer over medium heat. Reduce the heat to low and simmer for 3 minutes. Add the remaining garlic, ketchup, brown sugar, onion, Worcestershire sauce, allspice, salt and pepper. Stir to combine, then cook for 15–20 minutes, stirring occasionally, until the sauce is thickened. Set aside to cool.
3. Grill the Pork Belly
Pre-heat your grill to high heat. Remove the pork belly from the marinade and pat it dry with kitchen paper. Discard the marinade. Place the pork on the grill or broil for about 4 minutes on each side until it’s crisp and golden.
4. Serve
Slice the grilled pork belly, drizzle with the spicy cola sauce, and sprinkle with toasted sesame seeds.
