Smoked Watermelon Paloma

A bold and smoky twist on the classic Paloma, this cocktail balances the earthy depth of mezcal with the refreshing sweetness of watermelon and the tangy spice of Tajín. The smoked saline solution enhances the complexity, while Franklin & Sons Pink Grapefruit Soda provides a crisp, citrusy finish. A refreshing yet layered serve with a hint of spice and smoke.

    Fill a Highball glass with cubed ice.​

    Watermelon & Tajín-Infused Agave Syrup:

    Ingredients:

    1000ml Watermelon Syrup​
    200ml Agave Syrup​
    Tajín (Choose Strength):​
    Mild: 15g​
    Medium: 25g​
    Strong: 30g​

    ​Method:

    1. In a container, combine the watermelon syrup and agave syrup.​
    2. Add the desired amount of Tajín.​
    3. Stir well to integrate the flavours.​
    4. Allow to infuse for 10-15 minutes.​
    5. Strain through a fine mesh sieve or cheesecloth.​
    6. Store in an airtight container.​

    Smoked Saline Solution

    Ingredients:

    100g Smoked Salt​
    1L Water​

    Method:

    1. Combine smoked salt and water in a container.​
    2. Stir until fully dissolved.​
    3. Strain through a fine sieve or cheesecloth.​
    4. Store in an airtight container ​

    Add mezcal, lime juice, Watermelon & Tajín-infused Agave Syrup, and Smoked Saline Solution.​

    Stir lightly with a mixing spoon to combine the ingredients.​

    Top up with Franklin & Sons Pink Grapefruit Soda.

    Stir gently again to incorporate.​

    Garnish with a wedge of grapefruit dusted with Tajín.
