Ginger Beer Chicken & Ribs

INGREDIENTS
For the Meat:
- 500g chicken thighs and drumsticks, bone-in, skin-on
- 500g pork ribs (whole rack)
- 5g ground allspice
- 2g star anise
- 500ml Franklin & Sons Brewed Ginger Beer
- 50g fresh ginger, sliced
- 2.5g ground ginger
For the Glaze:
- 250ml Franklin & Sons Brewed Ginger Beer
- 75ml lime juice
- 150ml tomato ketchup
- 21/2 tbsp soy sauce
- 2 tbsp honey
To Serve:
- Lime wedges, for squeezing over
INSTRUCTIONS
1. Marinate the Meat
In a large bowl, toss the chicken and ribs with the ground ginger and allspice until well coated. Cover and marinate in the fridge for at least 1 hour, or overnight for an even deeper flavour.
2. Slow Cook the Meat
Pre-heat your oven to 160°C (140°C fan, gas mark 3). Arrange the marinated meat in a deep roasting tin, then add the Franklin & Sons Brewed Ginger Beer, sliced ginger and star anise. Pour in enough water to just cover the meat. Cover the tin tightly with foil and cook in the oven for 2 hours and 30 minutes.
3. Make the Glaze
While the meat cooks, combine all glaze ingredients (ginger beer, lime juice, tomato ketchup, soy sauce and honey) in a saucepan. Bring to a boil, then reduce the heat and simmer for about 30 minutes, stirring occasionally, until the glaze is thick and sticky. You can make this up to 2 days in advance.
4. Barbecue & Serve
Remove the meat from the oven, pour away the cooking liquid, and pat the pieces dry with kitchen paper. Brush each piece generously with the glaze.
5. Grill to Perfection
Heat up the barbecue and wait for the flames to subside. Place the glazed chicken and ribs on the grill and cook for 15-20 minutes, turning occasionally and brushing with more glaze until they’re hot, charred, and sticky. If it’s not quite barbeque weather, pop the chicken and ribs back into the oven under a pre-heated grill on high heat and cook for a further 20 minutes, following the same instructions with the glaze.
6. Serve
Arrange the chicken and ribs on a serving platter and add lime wedges for an extra burst of citrus.
