Vegan Orange & Grapefruit Gazpacho

Cool down with our vegan orange & grapefruit gazpacho. This refreshing, vibrant soup is made with a blend of grapefruit, oranges and ripe vegetables, creating a light and zesty dish perfect for warm days.

Ingredients

    • 150g grapefruit, peeled and segmented
    • 200g oranges, peeled and segmented
    • 100ml Franklin & Sons Valencian Orange & Grapefruit, chilled
    • 500g ripe tomatoes, seeded and chopped
    • 80g red pepper, seeded and chopped
    • 100g cucumber, peeled and chopped
    • 50g tomatillo, chopped (in a pinch green tomatoes are a good substitute)
    • 80g purple onion, chopped
    • 2 cloves garlic, minced
    • Juice of 1 lime
    • 2 tbsp red wine vinegar
    • 1/4 tsp Tabasco sauce (adjust to taste)
    • Salt and pepper, to taste
    • Fresh coriander, for garnish

    Prepare the Ingredients
    Chop all the fruits and vegetables into manageable pieces for blending.

    Blend the Gazpacho
    In a blender, combine the grapefruit, oranges, tomatoes, red pepper, cucumber, tomatillo, purple onion, garlic, lime juice, red wine vinegar and Tabasco sauce. Blend until smooth. Pour in the chilled Franklin & Sons Valencian Orange & Grapefruit and blend briefly to combine. Season with salt and pepper to taste.

    Chill the Gazpacho
    Transfer the blended gazpacho to a container and refrigerate for at least 1 hour (the longer the chill the better the flavour). This chilling time allows the flavours to meld and enhances the refreshing taste.

    Serve
    When ready to serve, remove the gazpacho from the fridge and ladle it into bowls. Garnish with grapefruit segments and fresh coriander for a vibrant touch.
